~Saute garlic, leeks, scallions, peppers, mushrooms to hot oil, season with any fresh herbs you are using today. ~Add the rest of vegetables. Adding the leafy greens 1st and letting them simmer down is helpful. ~Add any vegetable water (if you've chopped the night before and stored vegetables in water), mushrooms and mushroom water to the broth. ~Cook for 10-15 minutes. Salt to taste. Enjoy!
