  • Super Kick _ _ _ Nutrition Veggie Soup








  • 6 Scallions, 2-3 leeks, large red onion (any or all of these)
  • 1 can tomatoes
  • 1/2 to I head cabbage (green or Chinese)
  • 2 c. dark leafy greens kale, collard greens, etc.
  • 1-2 c. grated daikon (white radish)
  • 4 stalks celery (leaves good too)
  • Oregano, thyme, bay leaf, parsley, basil (any or all of these)
  • 4-6 shitake mushrooms (discard stems, soak caps in water for 30 min. before adding)
  • 1 t. hot red pepper (dried or fresh) if spicy food is not for you, use less or use fresh green, red, yellow pepper chopped fine.
  • Garlic (2-3 cloves are good, more is fine though)
  •  4 inch piece of kambu dried seaweed
  • 1 strip wakame or 1/2 T. shredded wakame (sea vegetable, like seaweed)
  • vegetable buillon or water (can use chicken or other stock but fat busting power is lessened with animal products)
  • Olive OIl (extra-virgin, cold pressed best)

  • ~Heat vegetable broth on low.

    ~Saute garlic, leeks, scallions, peppers, mushrooms to hot oil, season with any fresh herbs you are using today.

    ~Add the rest of vegetables. Adding the leafy greens 1st and letting them simmer down is helpful.

    ~Add any vegetable water (if you've chopped the night before and stored vegetables in water), mushrooms and mushroom water to the broth.

    ~Cook for 10-15 minutes. Salt to taste.
